Everyday challenges of what to cook that everyone in my family will be happy with. The life of being a stay-at-home mom of a teenager and a college student.
Today's Recipes
Oven Roast Beef
1 Roast
1/2 - 1 cup of water
1/2 a medium onion
You can season with a little bit of sea salt and white pepper or you can put a rub of olive oil, garlic and italian seasoning right on the roast. You can also peel some garlic and insert it directly into the meat. Cook in oven for recommended time.
Grandma's Healthy Green Salad
Romaine or Green Leaf Lettuce
3 stalks of celery chopped
1 cup of broccoli cut up
1 cup of cauliflower cut up
2 cups of cucumber diced
2 green onions or 3 TBSP of white onion
Grandma's Cooked Salad Dressing
This must be made in advance the day before or in the morning so it is cool enough to add by dinner time.
Makes 2 cups and can be kept in the refridgerator 6 weeks
2 eggs
1/2 cup sugar
1/2 tsp Redmans Salt
3/4 tsp dry mustard powder
1 1/2 TBSP flour
Stir together in medium size sauce pan, then add 1/2 cup vinegar and 1/2 cup whipping cream
*NOTE* Vinegar must be added first or mixture will curdle
Bring to boil at medium heat, stirring constantly at a slow pace, add 2 TBSP butter, put in glass jar and let sit cooling on cupboard.
Enjoy your meal with your family at your dining room table.
